Perfect for those busy weeknights, this set-it-and-forget-it recipe takes minutes to prep, and you’ll have a hot and tasty meal waiting when you’re finally ready to settle in for supper after a long day of working, running errands, or momming it at the homestead.
Without further adieu, here’s one of our favorite easy weeknight chicken dinners: Marry Me Chicken!
Ingredients:
Here’s what you need to make this family chicken recipe. Feel free to adjust the portions to taste and family size!
- 3 lbs boneless, skinless chicken breasts
- 4 cloves of garlic (minced)
- 1 jar sun-dried tomatoes
- 1 cup chicken broth
- 1 tsp dried oregano
- 1 Tbsp freshly cracked black pepper
- 1 tsp salt
- ½ tsp red pepper flakes (if you like spicy)
- ½ cup heavy cream
- ⅓ cup freshly grated parmesan cheese
- 1 bag of chopped spinach
- Fresh basil to taste
Steps:
- Add all ingredients to the crockpot.
- Set the crockpot on low.
- Let everything cook for 6-8 hours.
- Halfway through (3-4 hours), break up the chicken so it absorbs all the delicious juices and keeps it moist.
- Add spinach in the last 30 minutes or so.
- After plating, top with fresh basil.
Serving Suggestions
This family chicken recipe is super versatile! We usually serve it with rice or orzo, but it would be amazing with pasta or as a hearty topping for baked potatoes. You could even turn this crockpot chicken dinner into sandwiches for lunch!
